Phytases are known to occur in microorganisms and plant. Commercially, phytase is being produced from different strains of Aspergillus ficcum and Aspergillus oryzae, which is a 3-phytase that hydrolyses the phosphate group at the C3 position first. Phytase of plant origin in 6-phytse that acts furst at C6 position. Microbial phytse has two pH optima at 2.5 and 5.5, while plant phytse has only one pH optimum at 5.2.
